The Butcher Man

A few weeks ago I got a phone call from a friend asking if we wanted some meat. I said sure, where did you get it. He said a vet in our ward had a cow with a broken hip that was going to be put down. the only catch was we had to slaughter, skin, quarter and butcher it. Fortunately, I missed out on the first three parts of the process but on Friday we picked up the meat about 40 minutes from home and brought it over to the vets house and butchered the cow. It was an amazing process. At first I was thinking we need to get a grill going...after about three hours I was thinking, I'm going to have all this meat and I'm never going to want to eat red meat every again. It took four of us about four hours to butcher the cow - it would have taken longer but the cow was old so we were advised to turn most of the meat into ground beef. After I got home about 10:30 I decided to trim our portion up a little more and then get it into the refrigerator. On Saturday we bought a small chest freezer so the meat wouldn't got bad. So if you're in town on a Sunday come on over for dinner...we're having roast.
